We have a new favorite!
It makes our belly AND our hearts happy.
We found this recipe from this website, and we loooove it.
You will get TONS of veggie servings, and it's low in calories, and it's high in nutrients, AND it's easy to make!
AND it’s delish.
It’s called the Instant Pot Vegetable Soup.
AND, there's more.
We also found a deeee-licious bread recipe with, get this, only 5 ingredients!
So take a look at the soup recipe, and then make sure you check out the bread recipe, too. You're welcome!
Here are all the details:
Vegetable Soup
Ingredients
12 ounces frozen California vegetables
12 ounces frozen Italian vegetables
1-15 ounce can diced tomatoes (fire roasted preferred)
1- 15 ounce can cannelloni beans or other white beans (undrained)
1-15 ounce can pinto beans, kidney beans, or your favorite beans (undrained)
1 tablespoon dried basil
1 tablespoon garlic, minced
1 tablespoon hot sauce
1/2 tablespoon dried oregano
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
3 cups boiling water
Directions
Note: This specific recipe calls for an Instant Pot or different electric pressure cooker, however you can make the same soup on the stove. Simply start with 4 cups of water and add more as necessary as water evaporates.
Add Ingredients into an Instant Pot or a different electric pressure cooker. Just dump them alllll in there. Put the lid on and turn the vent to Pressure. You can select either high or manual pressure for 2 minutes.
Instant Pot will do its thing and begin to build pressure (this can take anywhere from 15-30 minutes). The countdown will then begin and count down from 2 minutes. When it beeps, it is finished! Turn Off or Cancel to turn off the Instant Pot.
Release the steam. Use caution and use a spoon to release the vent knob so you don't burn yourself! The Instant Pot will then release so you can remove the lid.
Stir and Enjoy! To make the soup thicker, feel free to add water or veggie broth. Feel free to experiment with different seasonings, and enjoy!
